Slow Cooker Chicken Enchilada Soup
If you’ve made my Easy Chicken Tortilla Soup, then you’ll love this recipe!
Ingredients for Chicken Enchilada Soup:
- Olive oil
- Onion + garlic
- Chicken broth
- Tomato sauce
- Chipotle chile in adobo sauce
- Fresh cilantro
- Black beans
- Petite diced tomatoes
- Frozen corn kernels
- Ground cumin + dried oregano
- Boneless, skinless chicken breast
How to serve Chicken Enchilada Soup
Serve with these toppings:
- Shredded Cheddar cheese
- Chopped scallions (or red onion)
- Fresh cilantro
- Avocado (or quac)
- Sour cream, optional

How about setting a pretty table and inviting your close friends over for a sweet dinner party?Last week we came together on a Thursday night for a lovely dinner party at my house, andI recently read a Proverb about friendships that made me smile.
The sweet smell of incense
can make you feel good,
but true friendship
is better still.
This is how I feel when some of my best lady friends are gathered around the table with me.
Buy primroses and placed in little galvanized buckets. White IKEA candles, cute party striped pink napkins, this table said “girlfriend party” all over it.

Speaking of girlfriends, I adore Gina who wrote the book, The Skinnytaste Cookbook. I am in love with her healthy recipes, and I wanted to try a couple of new ones for this party. Just look at all the fabulous ingredients!?
Chicken Enchilada Soup
This Enchilada Soup was the bomb! On my menu? A Mexican pizza, giant green salad (cilantro, tomatoes, red onion, carrots, avocado), and this soup – with all the toppings.
Dessert was this Gina’s amazing Bananas Foster al a Mode on Ice Cream.
Ten minutes to bake and then serve hot? Perfect easy dessert.

Ingredients
- 2 teaspoons olive oil
- ½ cup chopped onion
- 3 garlic cloves, minced
- 3 cups low-sodium chicken broth
- 1 8-ounce can tomato sauce
- 1 to 2 teaspoons chipotle chile in adobo sauce, chopped
- ¼ cup chopped fresh cilantro
- 1 15-ounce can low-sodium black beans, rinsed and drained
- 1 14.5-ounce can petite diced tomatoes
- 2 cups frozen corn kernels
- 1 teaspoon ground cumin, plus more to taste
- ½ teaspoon dried oregano
- 1 pound boneless, skinless chicken breast
Toppings:
- 3/4 cup shredded reduced-fat cheddar cheese
- ¼ cup chopped scallions
- ¼ cup chopped fresh cilantro
- 1 medium, 4-ounces avocado (optional)
- 6 tablespoons reduced-fat sour cream, optional
Instructions
In a medium nonstick sillet, heat the oil over medium heat. Add the onion and garlic and cook, stirring until soft, about 3 minutes. Add to the slow-cooker along with the broth, tomato sauce, chipotle in adobo, cilantro, beans, tomatoes, corn, cumin, and oregano. Add the chicken breasts. Cover and cook on low for 4 to 6 hours.
Remove the chicken, shred it with two forks, and return it to the slow cooker.
To serve, ladle into serving bowls and dividing evenly. Top with cheddar cheese, scallions, cilantro, avocado, and sour cream (if using).
