It’s sweet, creamy, and made in just one minute. This protein fluff is the best way to curb your sweet tooth while giving you a healthy protein boost (though this chocolate protein mousse is pretty great too).

While protein fluff works as a snack any time, as a Certified Nutrition Coach, I’ve personally been using it as a bedtime snack for the last few years.

Not only is it easy to whip up when you’re feeling “munchy” but after-dinner is when the biggest chocolate cravings occur. Making this a “fix-all” protein recipe (just like this healthy chocolate protein pudding!).

Ingredients

This chocolate protein fluff is different than most in the sense it doesn’t contain instant jello/pudding mix and is made without xanthan gum.

The instant jello mix is often used to keep the recipe low calorie and the xantham to help bind it together.

However, this recipe uses only vegan protein powder to create its fluff. Simple ingredients, delicious results.

Vegan vanilla protein powder: the kind of protein powder you choose will affect the texture and flavor. In order to gain maximum fluffiness, you want to use a protein that's pea-protein based (notes below).

Peanut butter: make sure to use fresh peanut butter. Using the harder stuff at the bottom of the jar won't blend as well.

Almond milk: any dairy-free milk will work. Personally, we use homemade hemp milk because that's what we have on hand.

Maple syrup: if you have a sweeter protein powder you may not need this. In that case, just add an extra bit of milk. However, this is what's used to give a hint of sweetness without being overbearing.

Cacao powder: not only does this give the protein fluff it's chocolate flavor but a wicked nutrient profile too! Learn more about cacao powder and why you want to add it to your diet.

Mini chocolate chips: totally optional but who says no to chocolate chips? These add a bit of texture and sweetness!

How To Make Vegan Protein Fluff From Scratch

  1. In a small bowl, combine the protein powder, cacao powder, peanut butter, syrup and plant-based milk.
  2. Whisk until somewhat smooth
  3. Let sit for 2-3 minutes for the protein powder to really absorb the liquid. Add in chocolate chips.

What Makes It Fluffy?

Because the recipe is not put into a food processor, you may be wondering what causes it to fluff up. The answer?

Vegan protein powder!

Vegan protein powder normally contains pea protein which absorbs a lot of liquid.

It’s this kind of protein that makes the snack “fluff” up and creates an almost cloud-like consistency (without a need for xanthan gum!)

There are however a few vegan protein powders, not pea protein-based (likeBotanicawhich is one of my favorites). You can still use it and it will taste great, but know that it doesn’t fluff up as much.

When To Use The Protein Fluff

Protein fluff is an amazing snack if you struggle to get enough protein into your diet (learn how to increase protein intake).

And while this chocolate recipe makes a great snack in general, it makesthe bestbedtime snack.

The double chocolate flavor helps curb after-dinner cravings and you can top it with any of your favoites to customize it further.

Plus, if you really want to step it up, you can add in a tiny bit ofmagnesium powderto help induce calm and bring on sleep!

If you’re watching calories, you’re not going to want too many toppings. Which is okay!

The base protein fluff recipe is delicious all on its own (provided you like the taste of your protein powder!).

However, if you’re using protein fluff to curb cravings, toppings are crucial.

Below are a few ways to create the ultimate protein fluff:

  • 2-minute coconut whip
  • Chocolate ganache
  • Crumbled nuts
  • Toasted coconut

How Is It Different Than Other Recipes?

Most other fluffs are frozen and have a marshmallow-like consistency.

This fluff doesn’t require processing time and is made in just one minute. Plus, the consistency is more like cloud fluff than marshmallow.

Can You Store It?

Truthfully, the fluff is best eaten immediately upon making it.

While you can pop it in the fridge for a bit (a couple of hours or overnight) to have a chilling effect, it won't beasfluffy as it is when made.

And within twenty-four hours it does tend to crust up on top.

So, fresh is best.
